Black Bean Fry

My version of delicious black beans, a meal in itself

Ingredients

  • 2 tsp olive oil
  • 1 medium carrot
  • 1 stalk celery
  • 1 15 oz. can black beans no added seasoning
  • 1 fresh bay leaf Find these in the produce section with other fresh herbs
  • 1 tsp green peppercorn (from brine)
  • Salt to taste (about 1/2 tsp)

Instructions

  • Mince the carrot and celery into 1/4-inch chunks
  • Sauté the vegetables over medium-low heat until they are well wilted and they begin to color, about 10 minutes.
  • Add entire contents of the bean can including the cooking liquid. Loosely cover the pan and allow to simmer on low until the mixture is thick.

Notes

My favorite beans are packaged by Goya. If you can find them, you probably don’t need to add much salt as they are more salted than most. This is a high-fiber dish that will keep you going all day. You can eat this alone, or over rice.
