Faux Soy
MCAS-safe version of soy sauce
Ingredients
- 200 g water
- 20 g blackstrap molasses
- 20 g salt This quantity yields a "lower sodium" style soy sauce.
- 5 g MSG (monosodium glutamate)
Instructions
- Combine all ingredients in a food-safe squirt bottle and store in the refrigerator. The mix lasts several months without issue due to the high salt content.
Notes
A note on molasses: There are many kinds of molasses. Blackstrap is a heavy boiled version that contains less residual sugar and sweetness, which is a good match for faux soy. I use Plantation brand non-organic blackstrap, which has a high calcium content. The Plantation organic molasses has an acrid flavor; I don’t recommend it.
