"Sour Cream"

This is a non-fermented, but real-dairy substitute for sour cream. MCAS safe if you tolerate dairy.

Ingredients

  • ΒΌ c heavy cream WARNING: dairy is frequently not MCAS safe. See note.
  • 3 g dry lactic-acid powder

Instructions

  • Stir together cream and lactic acid. Allow mixture to sit for about 5 minutes, then stir again. The lactic acid curdles the cream and provides the appropriate tang.

Notes

This recipe contains milk, which is a high-risk food with high inflammatory potential. At the start of my MCAS journey, I could eat these foods only if extremely fresh, with the carton being opened within about 1 day of purchase. I do not recommend this recipe for high-sensitivity individuals. That said, traditional sour cream is MUCH worse, so this is a decent compromise if you are able to tolerate milk.
